Nektar Dolce Vanilla is designed to be used on wines during their Malolactic fermentation stage or during the aging process where intense aromatics of coffee and toast as well as a smooth and velvety strructure are required.

The choice of product, the dose rate, the stage at which the product is incorporated and the length of time it remains in contact with the wine are defined according to the objectives the winemaker is seeking to achieve.

Oak:               Quercus Petraea and Quercus Robur

Toasting:        Proprietary heavy toast

Dose rate:       White wines - ageing   1.5 - 3g / litre for 4 - 8 weeks

                         (depending on the intensity required)

                        Red wines - ageing      2 - 4g / litre for 4 - 8 weeks

                         (depending on the intensity required)
