Potassium Caseinate - Caseo Speed

Caseo Speed  (Extra pure Potassium Caseinate)  is a protein fining which is added to white wines to remove phenolic bitterness, harshness, "off" colours, particulate matter and phenolic substances causing turbity.   It clarifies wines, reduces oxidized odours and freshens wines.  Useful in the partial reduction of metals due to its capacity of absorbing iron and copper.

May be used in conjunction with Bentonite for faster settling and compact lees compaction.


Dose:           20 - 50g/100L in wine - Determined by trial

                     30 - 100g/100L in musts

                     40 - 80g/100L in oxidised wines.


Preparation:   Hydrate in cold water in a ratio of 1:20 for 2 to 3 hours and add to the wine while vigorously stirring since it will coagulate in acidic solutions in a  few seconds.
