Characteristics
A vigorous yeast ideal for quality sparking production and can be used as a still wine fermenter on varieties such as Chardonnay. Limited production of higher alcohols and minimum production of pyruvic acid resulting in lower levels of SO2 requirements. Ferments fructose.
