A major advance in the treatment of white wines to prevent the precipitation of Potassium Bitartrates has now been approved for use in wines by Food Standards Australia & NZ and is now available to winemakers in Australia.

Active research by Ever has lead to the development of a liquid CMC (carboxymethylcellulose) for direct addition to finished wines prior to bottling to prevent the precipitation of unsightly Potassium Bitartrates alleviating the need for prolonged refrigeration at -4║C to achieve a similar result - a significant cost saving!

Carboyxmethylcellulose has been in use in the food industry for many years and only recently been approved by Food Standards Australia & NZ for Australian produced wines and the international OIV for wines destined for export. 

Evercell 05 (5%) is more effective and reliable than products using mannoproteins and has been specifically formulated in a liquid form as in its granular state, CMC's are difficult to hydrate.

    Evercell 05 should be added after all other physiochemical modifications have been done (acid adjustments, fining, etc.) it is essential for the wine to:
     be protein stable;
     not contain residual fining proteins
     not contain lysozyme
     not be treated later with lysozyme.


  • No detectable flavour or odour associated with its use - 5% solution.
  • Ready to use in liquid format and easy addition to bulk wine.
  • Stabilized in 48 - 72 hours
  • Not recommended for Rose or red wines as colour may precipitate (particularly at lower temperatures)
  • Good shelf life not requiring refrigeration.
  • Oenological CMC is a polysaccharide derived from natural wood cellulose.
  • Eliminates the need for prolonged refrigeration to achieve the same result ( significant cost savings)
  • One dose rate should cover all situations.
  • Excellent filtrability following treatment -  (Shorter time intervals between product application and bottling could lead to slower filtration and potential filter clogging). In any case, it is advisable to first check the filtration index before starting bottling.
  • Unlike cold stabilization, there are no changes to a wines pH, T/A or organoleptic qualities as Evercell 05 acts as inhibitor of nucleation and crystal growth and is not designed to force crystals to form and precipitate.
  • Inexpensive! ( 0.01c to 0.02c per litre ) - compare the cost of running your refrigeration unit for 2 - 3 days!
