 What is CMC and why should I use it?

A major advance in the treatment of white wines to prevent the precipitation of Potassium Bitartrates has now been approved for use in wines by Food Standards Australia & NZ and is now available to winemakers in Australia.

Active research by Ever Intec has lead to the development of  EVERCELL 05  - a liquid CMC (carboxymethylcellulose) for direct addition to finished wines prior to bottling to prevent the precipitation of unsightly Potassium Bitartrates alleviating the need for prolonged refrigeration at -4ºC to achieve a similar result - a significant cost saving!                    Read more»»»»»
